Recipe submitted by Richard Edwards of Carlisle, Richard writes:
"Five years ago I was overweight, not eating healthily and smoking 20 a day. Then my son Max was born and I realised that because he would be eating what I would be eating I needed to improve my diet.
"Out went the instant ready meals and mushy shop bought bread (I also stopped smoking). In came fresh vegetables, properly cooked meals and fantastic home-made bread.
"I bought myself a breadmaker and started experimenting with recipes. This was one of the first I ever made and I still bake it on a regular basis. It is tasty and great with pasta - brilliant for January after all the rich food everyone eats over the festive season."
