Pear, Blue Goat Cheese and Walnut Focaccia

Ingredients:

  • 500g Carrs Breadmaker Strong White Flour
  • 1 tbsp sugar
  • 1 tsp salt
  • 1½ tsp fast action dried yeast
  • 280ml water
  • 2 tbsp extra virgin olive oil

Topping:

  • 1small ripe pear, thinly sliced
  • 50g blue goat cheese, cubed
  • 75g walnuts, coarsely chopped
  • Olive oil, to taste

Method: Bread Machine

  1. Follow the manufacturers’ instructions regarding the order of liquid/dry ingredients, and set your machine to the dough/pizza setting.
  2. When the cycle is complete, tip the dough out onto a floured surface and knead well.
  3. Shape to fit a well-oiled and floured baking tray. Using your fingers push holes into the dough.
  4. Cover loosely with oiled cling film and leave to rise in a warm place for 20 minutes.
  5. Remove cling film, scatter to taste with thinly sliced pear, cheese, walnuts and plenty of olive oil. Bake at 200°C (400F, gas mark 6) for 35 minutes or until golden.
  6. Transfer to a wire rack and leave to cool before serving.
