Focaccia: Pear, Blue Goat Cheese and Walnut - a former Loaf of the Month

Ingredients:
500g Carrs Breadmaker Strong White Flour - 1 tbsp sugar
- 1 tsp salt
- 1½ tsp fast action dried yeast
- 280ml water
- 2 tbsp extra virgin olive oil
Topping:
- 1 small ripe pear, thinly sliced
- 50g blue goat cheese, cubed
- 75g walnuts, coarsely chopped
- Olive oil, to taste
Method: Bread Machine
- Follow the manufacturers’ instructions regarding the order of liquid/dry ingredients, and set your machine to the dough/pizza setting.
- When the cycle is complete, tip the dough out onto a floured surface and knead well.
- Shape to fit a well-oiled and floured baking tray. Using your fingers push holes into the dough.
- Cover loosely with oiled cling film and leave to rise in a warm place for 20 minutes.
- Remove cling film, scatter to taste with thinly sliced pear, cheese, walnuts and plenty of olive oil. Bake at 200°C (400F, gas mark 6) for 35 minutes or until golden.
- Transfer to a wire rack and leave to cool before serving.
