Lil’s Focaccia - a former Loaf of the Month (May 2009)

Ingredients:
- 500g Carrs Breadmaker Strong White Flour
- 1 tbsp sugar
- 1½ tsp fast action dried yeast
- 300ml water
- 1 tbsp extra virgin olive oil
- 50g stoned green or black olives, halved

Topping:
- Sea salt
- 50g stoned green or black olives, halved
- Red onions, sliced
- Extra virgin olive oil
- Fresh thyme leaves
Method: Bread Machine
- Follow the manufacturers’ instructions regarding the order of liquid/dry ingredients, and set your machine to the dough/pizza setting.
- When the cycle is complete tip the dough out onto a floured surface sprinkled, knead well and cut into 4 pieces. Shape each into a ball, flatten and arrange each onto a lightly greased baking tray. Using your fingers push holes into the dough.
- Cover loosely with oiled cling film and leave to rise in a warm place for 20 minutes.
- Remove cling film, season to taste with salt, red onion slices, halved olives, fresh thyme and plenty of olive oil.
- Bake at 200°C (400F, gas mark 6) for 12-15 minutes or until golden.
- Transfer to a wire rack and leave to cool before serving.
