Figgy Bread - a former Loaf of the Month (December 2009)

Ingredients:
60ml Calvados brandy- 200g dried figs, roughly chopped
- 175ml milk
- 1 egg
- 50g butter, softened
- 1 tsp salt
- 50g soft brown sugar
- 350g Carrs Breadmaker Strong White Flour
- 1½ tsp fast action dried yeast
Method: Bread Machine
- Warm the Calvados and pour it over the chopped figs. Allow to soak for at least 30 minutes.
- Drain the brandy from the figs, retaining the liquid.
- Place all ingredients including the Calvados into the pan, except the figs, by following your manufacturers’ instructions regarding the order of liquid/dry ingredients.
- Place the figs in the nut/raisin dispenser (if available) and set your machine to the basic/normal raisin setting, medium loaf, light crust. If you do not have a nut/raisin dispenser when the machine indicates (with a beeping sound), add the figs and close the lid.
